Laurel’s quick intake of air was
hard to miss as she watched her little girl.
Still kneeling, Wes stretched his
hands toward Sarah-Jane. “Come on, sweetheart, you can do it.”
She stepped once more, then
bobbled, but caught herself before continuing. Several steps later, she
collapsed into Wes’s waiting arms.
“You did it, Sarah-Jane!” He
hugged her tight, pride weaving through him.
“I can’t believe it.” Laurel
pressed a hand to her cheek. “That’s more steps than she’s ever taken. She was
actually walking all by herself.”
“I guess you just had to
strengthen up those legs, didn’t you, Sarah-Jane?” Still holding his daughter,
he stood.
“Or have the right motivation.”
He looked at Laurel to find her
smiling as she approached.
She took hold of her daughter’s
hand. “Were you showing off for your daddy?” Laurel froze then and so did he.
Their eyes met.
“I-I’m sorry.” She took a step
back. “That just kind of slipped out.”
“No, it’s okay.” He smoothed a
hand over his daughter’s back. “Daddy is a distinction I will wear proudly.”

you, June. It’s great to be here.
JUNE:
Please share with us how the idea for this story came to you. How did you
develop the characters and setting?
MINDY:
Honestly,
I don’t remember what inspired this story. Usually, it’s just a nugget of
“what-if” that gets the ball rolling. Developing the setting was probably the
most difficult thing for me. My first nine books were set in Ouray, Colorado, a
real place, so I knew what was where and what it looked like. Creating the
fictitious town of Bliss, Texas was a challenge because Texas is also where I
live. Ultimately, I ended up picking and choosing interesting things from the
many tiny towns I’ve driven through or visited.
JUNE:
Do you have any writing tips you can offer to aspiring or new authors who may
read this post? What are some things that helped you on the road to success
when you began your writing career?
MINDY: Never
stop learning and never give up. If God has called you to be a published
author, it will happen in His time. Our job is to be obedient to that calling
and that means honing our craft until it’s worthy of publication. Writer’s
organizations such as ACFW (American Christian Fiction Writers) have been
incredibly valuable to me at every step of the writing process. Learning,
seeking publication, learning, promotion, learning… I cannot recommend them
highly enough.
JUNE:
Your website states that you love to cook. Do you have a favorite family recipe
that you would like to share with us here?
MINDY: Narrowing
it down to just one is very difficult, but this is Chicken and Rice
recipe has been passed down through at least three generations and is still a
family favorite today.

Chicken & Rice Recipe
·
A whole chicken, cut up, or whatever
part of the chicken happens to be your favorite.
·
1 ¼ cups long-grain white rice,
uncooked
·
1 packet dry onion soup mix
·
1 teaspoon Italian seasoning
·
1 ½ teaspoons Beau Monde, a Spice
Islands brand seasoning blend. **See note
·
4 cups water
·
4-8 tablespoons melted butter
Preheat oven to 400 degrees.
Place the dry rice in a 9 x 13
baking dish and sprinkle with the soup mix and seasonings. Pour water over rice
and give it a quick stir.
Dip chicken pieces in melted butter
to coat. Nestle chicken into rice mixture.
Bake 45-50 minutes, until chicken is
cooked, and liquid has been absorbed.
** The Beau Monde and Italian
seasoning are important for the right flavor. If you do not have access to Beau
Monde, you can make your own with 1/2 tsp celery salt, 3/4 tsp onion powder and
1/4 tsp seasoning salt. Mix together before adding to rice.

You and your husband live on a ranch in Texas. Please share some of your
favorite things about living on a ranch and how they contribute to your
spiritual health and well-being.
MINDY: Oh,
where do I start. We moved to the ranch that has been in my husband’s family
for generations three years ago. Prior to that, we’d lived in the suburbs of
Dallas-Ft. Worth for decades, so it was wonderful to get away from all the
hustle and bustle of city life. Not to mention the traffic. Oy!
Our house is in the woods, so we’re
surrounded by nature and with a slower pace of life, I’m actually able to stop
and enjoy it. I’m constantly on the lookout for God’s glory, whether it’s a
beautiful sunset, a hummingbird at my window or a newborn calf. I’m calmer now,
and with all that’s gone on in 2020, I have an even greater appreciation for a
simpler life.

That chicken recipe sounds delicious. I was wondering in it can be cooked in an Instant Pot. Congrats on the book.
ReplyDeleteSonnetta, I have yet to experiment much with my Instant Pot, so I can't tell you how it would do. The good news is that it doesn't take that long to bake in the oven.
